I don’t know about you, but I’m fresh out of ideas on what to cook for dinner these days. I think I’ve made our favorite go-to’s at least three times by now.

Luckily, my group texts with friends keep things new and fresh with their recipe ideas and what they are cooking up for dinner. I’m taking this one from a Stroller In The City team member, Madison! She knows how much my kids love anything tex mex, and said this recipe was super simple to make and quick!     I have made this many times and it’s now a family favorite; I do add a 3rd can of beans to make it a bit heartier for my husband.
