Eggnog Chia Pudding is a perfect dairy-free treat for the holidays.

Eggnog Chia Pudding Recipe (Dairy-Free) – Steph Gaudreau (2)

The recipe is based on myCoconut Chia Seed Pudding. I was in the mood for a holiday treat the other day and thought “eggnog”…

…but then I thought how quickly drinking it down would be over. So, I decided to make the eggnog but add chia seeds to thicken it into a pudding.

What’s In This Chia Pudding?

Warm cinnamon and nutmeg pair with the sweetness from the dates or honey. And all that is supported by the creaminess of the coconut milk and egg yolk.

I won’t go so far as to call this a superfood pudding – because it’s a term that’s tossed around a little too liberally these days – but as far as desserts go, this one’s pretty healthy.

Why is This Eggnog Chia Pudding Healthy?

The coconut milk is packed with medium chain triglycerides (MCT) for quick energy, and the egg yolk comes to the table with choline, biotin, and close to an alphabet full of vitamins: A, D, E, K just to name a few.

And of course, chia seeds are touted for their high Omega-3 fatty acid content.

I left outthe booze found in traditional eggnog. But hey, if you want to add it, go ahead…you’re the captain of the ship after all.

The result was thick and creamy Eggnog Chia Pudding with just a little sweetness. I used coconut milk instead of dairy, but you could certainly use heavy cream or milk if that’s your preference.

How To Make Eggnog Chia Pudding

This Eggnog Chia Pudding would also be great with cashew or almond milk instead of coconut milk.

You can make this eggnog chia pudding the old fashioned way by tempering the eggs first, but I just made it stupid-easy by dumping most of the ingredients into a potthen heating it gently on the stove until it thickened. The chia seeds really take care of the thickening so you don’t need to get the egg yolks up to a higher temperature.

Just be sure to not let the mixture boil. If it does, the egg yolks will curdle and get lumpy. It’ll still taste good but may not be too pleasing to the eye.

These would make tastylittle puddings for Christmas or New Year’s parties…

…and you don’t need a lot to get the eggnog effect.

Eggnog Chia Pudding is a festive dessert that's dairy-free and paleo...and the best part is that it tastes just like eggnog. Simple to make!

Ingredients

  • 4 large dates or 2 tbsp raw honey
  • 14 oz coconut milk full-fat
  • 4 egg yolks
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 6 tbsp chia seeds

Instructions

  1. If using dates, place the dates in a heat-proof bowl and cover with boiling water. Let sit for 15-20 min to soften. Drain the water.

  2. Add the dates, coconut milk, egg yolks, vanilla, cinnamon, and nutmeg to the blender. Blend on high speed until the dates are broken down (about a minute). Pour mixture into a small heavy-bottomed pot.

  3. If using honey, combine the honey, coconut milk, egg yolks, vanilla, cinnamon, and nutmeg in a small heavy-bottomed pot. Heat on low, whisking constantly until the mixture thickens…this should only take a few minutes. Be careful! You don’t want it to curdle so do not let the mixture boil.

  4. Turn off the heat and add the chia seeds. Stir very well. Pour the eggnog pudding mixture into a storage container (I like Mason jars or other glass-lock containers) or serving glasses.

  5. Allow to sit for at least an hour, preferably 2 or more, before eating. Sprinkle with extra cinnamon or nutmeg or some coconut whipped cream before serving.

  1. This looks fantastic! I can’t wait to try it!

    1. Thank you Jennifer! It’s getting closer to that holiday time, isn’t it? 🙂

  2. Found this on Pinterest – it looks fantastic! Is there any way you can set it up so when we hit the print button it fits on one page? It currently is 4 pages. Thanks!

  3. Do happen to have the nutritional info and serving size?

    1. I don’t…this one would be easy to pop into Fit Day!

  4. How do you make coconut whipped cream or can I buy it somewhere?

  5. Oh my gosh, I have been craving eggnog and I think this will do the trick. My kids are coming Tues to celebrate Christmas with me and I think I will make this for them. Who knew chia seeds could thicken a pudding. Since I am pretty new to paleo I am learning all the time. I have 35 years experience in the food industry with cooking and creating recipes but it is always very exciting to learn new and more real techniques.

  6. I tried to print this too and also had a problem. I see where you can eliminate the photos but not anywhere to simply print the recipe plus one photo. Can you please double check to make sure this is working as you expect?

    1. Hi Beth…if you hover over each section, a little shaded box will pop up and say “click to delete.” So instead of checking the box that says “remove images” try that. I am working on retrofitting all my old recipes to a more streamlined system but as you can imagine, it’s taking a while 🙂

  7. Will the egg yolks cook in the amount of time this is heated?

    1. Yes.

  8. Is it the solid or liquid from the coconut milk can?

    1. Both.

  9. Tried this one today and LOVED it. I used the honey. I had a little over a cup of the coconut canned milk and used almond milk for the rest. Was not sure when it was done, but I must have guessed right. Turned out great. Will make again, and again!

    1. Yay! Super glad you liked it!

  10. This is SUPER good. I’m sad I just “found” this recipe now. So will make again and again. I used honey and it is perfection. Will try dates next time, just to compare the two, but honestly —- the honey version is no slouch!! YUM.

    1. Yay!! So glad you liked it Karen! <3

  11. Oh YUM!! These look and sound delicious. We love eggnog – what a perfect way to incorporate the taste (and nutrition!) without all the nasty other stuff. Will make this weekend! Thanks!

    1. Hope you love it Karen!

  12. i’m sure this is great but if it has eggs it’s not dairy free…

    1. Eggs are NOT dairy.

Dairy = a milk product. Yes they are often sold in the dairy section of the grocery store (along with a ton of other things that aren’t dairy), but eggs are not a milk product. I can’t even believe I have to explain this.

FAQs

Why is my chia seed pudding not thickening? ›

If your chia pudding isn't thick enough, just add more chia seeds to the mixture and let it sit a bit longer. You can also use a thicker milk. Full-fat canned coconut milk creates an ultra thick and creamy chia pudding. If you hate the texture of chia pudding, try blending it in a high powered blender like a Vitamix.

Why did my chia pudding come out watery? ›

If your chia pudding is runny, it means you added too much milk or didn't let it soak long enough. Measure everything and let the chia pudding soak for at least 2 hours.

Why is my chia seed pudding too slimy? ›

Get your ratio right. This is probably the most important thing you need to know about making chia seed pudding: A high ratio of seeds to liquid will give you a thicker, more delightful pudding. Fewer seeds in more liquid will result in a slimy texture.

How do you fix runny chia seed pudding? ›

If your chia pudding is looking watery at first glance don't just be tempted to add more chia seeds, as with time it will all balance out. Instead, refrigerate it for a minimum of two hours, but ideally overnight, as this allows the pudding time to thicken and gives it that set consistency.

Can you put too much chia in chia pudding? ›

Because of their high fiber content, eating too many chia seeds may cause constipation, diarrhea, bloating, and gas. Chia seeds may also cause flare-ups with inflammatory bowel conditions such as Crohn's disease. Choking hazard. Dry chia seeds absorb water, which causes them to swell up and become gelatinous.

Does chia pudding dehydrate you? ›

Chia seeds can absorb up to thirty times their weight in water, leading to dehydration if consumed in excessive amounts. This is especially risky for people who are not drinking enough fluids along with chia seed consumption.

Why is my chia pudding hard? ›

Here's why: As the chia seeds absorb moisture, they gel up and become somewhat sticky. If they stick together in a clump, they won't plump up, and you'll end up with a very disappointing clumpy-hard-but-wet mixture. So, just remember to stir!

How healthy is chia pudding? ›

And here's the best part: it's SUPER healthy.

Chia pudding is high in protein, full of omega-3s, packed with fiber and helps keep you full and satisfied all day long. It's also meal-prep friendly which makes it all that much better for busy moms and professionals.

What not to mix with chia seeds? ›

Omega-3 fatty acids: Chia seeds contain a high amount of omega-3 fatty acids. It is known that high levels of omega-3 fatty acids may increase the risk of bleeding. Therefore, it is advised to avoid taking chia seeds with foods or supplements rich in omega-3 fatty acids.

What happens to your gut if you eat chia pudding? ›

Chia seeds can absorb 10-12 times their weight in liquid, which is what makes chia pudding so filling. ”This keeps hunger at bay, meaning chia can be good for weight management,” says Soutter. Plus, soluble fibre lowers blood levels of 'bad' LDL cholesterol, feeds 'good' bacteria in your gut, and bulks up stools.

Why did my chia pudding not work? ›

You might also consider adding more liquid to your chia pudding. The trick to a seriously creamy chia pudding is adding enough liquid to fully hydrate your seeds. If you have ever felt underwhelmed by a pudding you have made, see if adding a splash more liquid doesn't make a difference.

What are the black dots in chia seed pudding? ›

Because those little black bugs are actually the super, powerful superfood - chia seeds!

How often can you eat chia seed pudding? ›

Nutrition in chia seeds

There is no RDA for chia seeds. Still, they can be safely eaten in amounts of 50 grams daily, which is about five tablespoons. The chia plant is a member of the mint family. It's traditionally grown in South and Central America because it grows in a dry environment.

What is the clear stuff around chia seeds? ›

The fiber in chia seeds is mainly soluble fiber and mucilage, the substance responsible for the gluey texture of moistened chia seeds.

How long does it take chia seeds to thicken up? ›

When chia seeds come in contact with liquid, they expand and form a gel. This makes them easier to digest. Chia seeds do not need to be soaked for a long time. In just five minutes, they have absorbed liquid, but we prefer to soak them for 20 minutes to achieve a pudding-like texture.

How do you thicken liquid with chia seeds? ›

To make your own, simple mix about a tablespoon of chia seeds into a glass of fruit juice, then refrigerate for a couple hours. The chia seeds will gel and thicken the drink.

Why is my instant pudding not thickening? ›

Mixing too vigorously can make the pudding watery, while mixing too little can prevent the ingredients from combining properly. Adjusting the mixing technique and following the recipe carefully can help achieve the desired thickness [3]. Adding gelatin: Gelatin can be used to thicken pudding.
